Wagyu
The special feature of Wagyu beef is its extremely fine and uniform marbling, which gives the meat its excellent flavour and extreme tenderness.
The name Wagyu derives from the Japanese and means “Japanese cattle”. The meat of this breed has a very thin fat cover and has a high proportion of unsaturated fatty acids. The intense marbling results from one part of a genetic predisposition, on the other of the special feeding. All this makes the Wagyu meat to one of the healthiest and most sought after beef varieties.
Chilean Wagyu beef

Chilean Wagyu Entrecôte

The classic steak, very tender, with a slight fat cortex. Enjoy this special steak with the characteristical fat eye at special occasions. Packed in boxes of approx. 16.9 kg.
Chilean Wagyu Rump

The Wagyu rump satisfies with delicacy and a very mild taste. Packed in boxes of approximately 15.9 kg.
Chilean Wagyu Fillet

Fillets 3-4 lbs / Fillets 4-5 lbs
The Wagyu fillet enjoys a special delicacy and a fine marbling. Pure luxury for the connoisseur. Packed in boxes of approximately 14 kg.
Quality
For the quality assessment of premium Wagyu beef, the following characteristics
- Marbling
- Meat colour and brightness
- Firmness and texture of meat
- Colour and quality of fat
are examined and evaluated. The classification is carried in 5 grades: grade 1 (inferior) to 5 (highest quality). The overall assessment depends on the lowest score of the individual features evaluated.
